Our amazing vintner, Ken Brown, has stated that the pick for our 2016 vintage Cabernet Sauvignon was amazingly clean and one of the best he has ever seen. We are expecting an exceptional wine with this vintage.
When the grapes are picked, they are then gently crushed to release the sugary juice and expose it to the yeasts.
The fermentation process will continue until all of the sugar has been turned into alcohol or the level of alcohol in the juice reaches 15%, whichever is sooner.
